Simple Slow Cooked Lemon Herbed Chicken

What does a healthy slow cooked casserole look like? While casseroles are a winter staple, they can often be laden with surplus fat from cheaper meat cuts. With enough time, you can leave a casserole to rest over night and scoop the excess fat from the top of the surface the next day. However, given that most of us cite time as the number one limiting factor in putting a healthy meal together, take a look at the slow cooked chicken recipe below.  Take 10 minutes in the morning to prep the food, set your slow cooker ready to cook- and come home to the smell of rustic lemony chicken.

Ingredients:

4 large boneless skinless chicken breasts

3 tablespoons of olive oil

2 large lemons, zested and juiced

3 large garlic cloves, minced

Pinch of Sea Salt

Cracked black pepper

1 tablespoon of dried Italian Herbs

Steamed greens and baby rocket leaves, to serve.

 

Instructions

1. Mix the olive oil, lemon zest and juice and minced garlic together in a small mixing bowl and pour it into the bottom of a large slow-cooker. Reserve the remains of one lemon.

2. Pat the chicken breasts dry with absorbent towel and place them into the slow cooker, turning them twice to cover with marinade.

3. Season the chicken with salt, pepper and Italian herbs.

3. Cut the remaining lemon into small pieces and tuck in and around the chicken.

4. Place the lid on top of the slow-cooker and cook on high heat for 3 hours. Serve with a side of steamed greens and baby rocket leaves.

 

NB: Timing of cooking may vary according to the manufacturer’s directions. Check your chicken after 2 hours. If it needs more cooking time, check the meat in 10 minute increments. Remember, the meat should be slightly pink as the chicken will still cook, once taken off the heat.
