Roasted Tomato, feta and Basil Spaghetti
Serves 2
1 packet SlimPasta Spaghetti
8 small truss tomato
125 grams Persian feta (crumbled)
½ cup fresh basil leaves
1 tablespoon dry mint
1 tablespoon olive oil
1 clove garlic
olive oil spray
salt and pepper if desired
- Prepare SlimPasta Spaghetti as per instructions on pack
- Place truss tomatoes on baking paper and lightly spray with olive oil and place in oven. Cook at 180 degrees for 6-8 minutes or until just cooked
- n pan place olive oil, heat gently add garlic cook until fragrant add prepared SlimPasta to pan and coat with oil and garlic
- Remove spaghetti from pan add crumbled Persian feta, basil leaves and mint and gently toss through
- Divide spaghetti between bowls. Spoon over roasted tomatoes and any juice.
