Recipe of the Month: Smoky Zucchini & Ricotta Frittata

The morning time slot here at Hypoxi is full steam ahead, with our motivated clients, waking up in the early hours in order to fit in their fat busting Hypoxi workout session before the realities of 9-5 are set in motion.

More often than not though, while these women are committed to their workouts, they can let their breakfast regime slip by the way side, either choosing to:

a) Grab  a low fat yoghurt (too many carbs)

Or even worse

b) Eat nothing…(will definitely lead to overeating later on…trust me girls, your body can’t be lulled into nothing without wanting a reward later)

This is where a little bit of weekend organisation, a Sunday afternoon for me, can be your best weight loss weapon when it comes to results. Food preparation and having ready-made, low carb and high protein meals on hand are a lifesaver, when you are pressed for time and the only low carb option at your take away joint is a heavily processed and sad looking Caesar salad.

One of my all time favorites is this EASY frittata. Filled with nutritious eggs and a good serving of veggies – home made, ready prepared meals are hands down the best fat burner around,

Ingredients (serves 4)

  • 4 eggs, lightly whisked
  • 2 green zucchini, ends trimmed, coarsely grated
  • 125g ricotta, drained of excess liquid
  • 1 tsp smoked paprika
  • 2 tsp coconut oil
  • Salt and pepper to taste

Method

  1. Preheat grill on medium-high. Whisk the egg in a large bowl. Add in the zucchini, ricotta, smoked paprika and salt and pepper.
  2. Heat the oil in a medium frying pan over medium heat. Pour in the zucchini mixture and cook for 5 minutes or until frittata is set around the edge and runny in the middle.

Cook under preheated grill, for 2 minutes or until golden brown and just set. Remove from grill. Cut the frittata into 4 pieces and individually wrap into portions ready for you to slip into your handbag before you head out the door.
